So who is Cake Boss Australia? We have so many wonderfully talented cake decorators in Australia like Greg Cleary, Kerrie Walsh, Handi Mulyana, Faye Cahill, The Team at Planet Cake, Fran McGregor and the list contines to grow. I think we should be so proud of what our cutting edge Cake Bosses have done for cake decorating the world over.
On our trip to ICES in North Charlotte we enjoyed what we saw and the US is definitely experimentational – I love that about them! They dont mind bring a new medium into their cake decorating and giving it a good crack. ie Isomalt – Cake Play Isomalt was everywhere and everyone is doing wonderous things with it! The only issue for our friends on the other side of the pacific is they loathe the taste of fondant. We try to tell them to put ganache underneath. Ganache not only improves the structure of the cake -but it compliments the “plastic” taste of fondant making if far more palatable. But alas for the average American baker its buttercream all the way. Due to this it appears their structural fondant cakes just dont have the sophistication and strong designs that our fellow Aussies have been able to achieve with ganache. But the tides are turning, the world becomes smaller day by day and we may see ganache under the fondant in the US one day soon.
So as much as everyone loves the show Cake Boss, Ace of Cakes, etc, I selfishly indugle my notion, that Australia is the Cake Boss of sophisticated cakes. I will excuse Ron Ben Israel, Richard Festen, Jacquie Butler and a couple of other amazing decorators from this strong statement and hope I dont get shot!

We only have a high quality acrylic one at the moment, we are trying to look at cheaper alternatives, but the reports havent been that good on them. So we are keeping to quality at this time.

Honestly, without sounding biased (after all, I am Australian) the Americans cannot hold a candle to what is going on in Australia with regards to cake decorating and, yes, even the experimental stuff. I have seen those you have mentioned close up and I still feel that the Aussies do it better in terms of execution, product knowledge and know how. My aunt, who has been baking and decorating for nearly 40 years now was doing all the stuff you see above well before the Butlers and Ben Israels were. A lot of people don’t realise that Australia led the way for a very long time in cake decorating. It’s only that the rest of the world has caught up.
The only difference is that over there they laud their decorators and put them on a pedestal. Over here, we say oh yeah such-and-such does great cakes. Very casual, very low key. Maybe this is a problem for some but I tend to like it.
But prowess? Australia really takes the cake on that score.
